Ingredients
- Farm fresh eggs - 3 pieces
- Dijon Mustard - 1.1 oz
- Garlic - 0.5 oz
- Salted anchovies in oil - 2.5 oz
- Worcestershire Sauce - 1 fl oz
- Vegetable Oil - 27 fl oz
- Meyer Lemon Juice - 0 fl oz
- Grated Pecorino Pepato Cheese - 7.1 oz
- TABASCO® - 0 fl oz
- Salt - 0.2 oz
- White Pepper (whole) - 0.1 oz
Step by Step guide
Step 1
Mix Dijon mustard with Worcestershire sauce, add TABASCO, grated fresh garlic, and the salted anchovies, strained through a sieve.
Step 2
Separate the yolks from the eggs and begin whisking with a mixer, gradually adding the chilled vegetable oil in a thin stream.
Step 3
Add the first mixture to the second in small portions.
Step 4
Gradually, the oil and yolks turn into a thick mass, to which we add lemon juice, salt, and pepper to taste, and finally, the grated Parmesan.
Step 5
Mix everything thoroughly and carefully.
