Description
Generally, making a Caesar salad at home is not that simple. It's not always easy to find the right lettuce or good Parmesan cheese in stores. That's why this recipe does not include anchovies, and you can use iceberg lettuce instead. You can even substitute homemade mayonnaise with store-bought (nothing terrible will happen, and the sky won't fall on your head).
Ingredients
- Romaine lettuce - 2.5 oz
- Skin-On Chicken Breasts - 3.5 oz
- Semi-Smoked Sausage - 1.8 oz
- Marinated cherries - 1.4 oz
- Farm fresh eggs - 2 pieces
- Ciabatta - 1 piece
- Olive Oil - 3 fl oz
- Mustard Greens - ½ teaspoon
- Meyer Lemon Juice - 2 teaspoons
- Salt - a pinch
- Sugar - a pinch
- Garlic - to taste
- Worcestershire Sauce - 1 teaspoon
- Parmesan Cheese - 3.5 oz
Step by Step guide
Step 1
Pat the chicken breast dry with a paper towel, add salt, pepper, lemon juice, and grated garlic. Let it marinate for 30 minutes. Meanwhile, fry the bacon until golden.
Step 2
Remove the crust from the ciabatta and tear it into random pieces. Mix with salt and garlic. Drizzle with olive oil and place in a preheated oven at 302°F for 7-10 minutes.
Step 3
Fry the chicken breast whole and finish cooking it in the oven.
Step 4
For the dressing, mix the egg yolk, mustard, salt, and sugar. Add lemon juice and whisk vigorously while gradually adding olive oil. Mix in the Worcestershire sauce (if you can't find it in the store, substitute with soy sauce), Parmesan, and garlic. Stir well.
Step 5
Prepare the poached egg. In a saucepan, bring water to a boil, add salt, and create a whirlpool with a whisk. Crack the egg into the whirlpool and cook until the white is set. Remove the egg with a slotted spoon.
Step 6
In a large bowl, tear the lettuce leaves, add halved cherry tomatoes, the chicken breast, fried bacon, and croutons. Dress with the sauce and toss.
Step 7
Serve on a plate, topped with the poached egg and grated Parmesan.
