California Spinach Salad

Ingredients

  • Spinach - 8.8 oz
  • Egg white - 2 pieces
  • Semi-Smoked Sausage - 5.3 oz
  • Grapeseed Oil - ½ cup
  • Red Wine Vinegar - 1 fl oz
  • Meyer Lemon Juice - 2 teaspoons
  • Soy Sauce - 2 teaspoons
  • Sugar - 1 teaspoon
  • English Dry Mustard - 1 teaspoon
  • Red Curry Powder - ½ teaspoon
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Morels - 4 pieces
  • Ground Dried Garlic - a pinch

Step by Step guide

Step 1

Boil the eggs hard. Cut into wedges or slices as desired.

Step 2

Slice the bacon into thin strips and fry until crispy. Transfer to a paper towel to drain excess fat.

Step 3

In a glass jar (container or shaker), mix the oil, vinegar, lemon juice, soy sauce, sugar, salt, pepper, garlic powder, curry powder, and dry mustard. Close the lid and shake vigorously. Chill in the refrigerator.

Step 4

Wash the spinach leaves (preferably use young leaves), let the water drain, and transfer to a salad bowl.

Step 5

Clean the mushrooms, slice them thinly (if desired).

Step 6

Before serving, dress with the chilled sauce and gently toss. Garnish with crispy bacon, egg, and mushrooms (if desired).
