Description
Recipe taken from a collection of recipes by Anna Johnson.
Ingredients
- Wheat Flour - 5.3 oz
- Coarsely Ground Rye Flour - 3.5 oz
- Water - 2 fl oz
- Olive Oil - 3 tablespoons
- Spinach - 7.1 oz
- Tofu - 1.8 oz
- Garlic - 1 clove
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the fresh spinach, dry it, and trim the stems. Then boil in salted water for 2 minutes. After that, drain the water. If using frozen spinach, allow it to thaw in boiling salted water, then remove and let it cool.
Step 2
Mix the two types of flour and salt. Add the olive oil and mix until the mixture is homogeneous. Then gradually add water and knead a stiff dough that should not stick to your hands. If necessary, add more flour to achieve the desired dough consistency. Let the dough rest, covering it with a towel.
Step 3
Meanwhile, heat a skillet. Add a little vegetable oil, the whole garlic, and some pepper (if desired), then add the spinach that has already drained and sauté for 2 minutes over medium heat. Then let the vegetables cool. Optionally, add finely chopped tofu to the spinach.
Step 4
Roll out the dough into a circle a few mm thick. Place the filling on one half of the disc, leaving about 1 cm to pinch the edges. Cover the filling with the other half of the pizza disc and pinch the edges, folding them upwards.
Step 5
Place the pizza in a preheated oven at 356°F for 25 minutes.
Step 6
The finished pizza can be served warm or cold.
