Clean the carp, gut it, cut off the head, and rinse the belly thoroughly. Cut it into pieces that will fit into appropriately sized jars.

In an enamel pot, dissolve salt in 4 liters of water, submerge the fish in the brine, and let it sit for one hour.

Step 3

Remove the carp and drain it in a colander for ten minutes, then distribute it into jars (leaving some space at the top) and without adding any liquid, sterilize the jars by placing them in a pressure cooker for one and a half hours.
