Ingredients

  • Egg white - 2 pieces
  • Chicken Liver - 7.1 oz
  • Hard Cheese - 7.1 oz
  • Garlic - 1 clove
  • Ham - 5.3 oz
  • Parsley - 0.4 oz
  • Butter - 1.1 oz
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Chicken offal - 14.1 oz
  • Ghee - 3.5 oz
  • Onion - ½ head
  • Chicken Broth - 3 fl oz
  • Ground Nutmeg - a pinch
  • Conchiglie Pasta - 7.1 oz
  • Apple Wine - 3 fl oz

Step by Step guide

Step 1

Dice the ham. Chop the chicken liver and sauté it with garlic in butter. Mix the ham, liver, 100 g of grated cheese, and chopped parsley. Season with salt and pepper.

Step 2

To prepare the sauce, chop the onion and sauté it. Add the prepared and chopped chicken offal, sauté, pour in the wine, and simmer until completely evaporated. Then add the meat broth, season with salt and pepper, and add a pinch of grated nutmeg.

Step 3

Stuff the cannelloni with the filling and place them in a baking dish filled with half of the sauce. Pour the remaining sauce over and sprinkle with grated cheese. Bake in the oven at 356°F for 20 to 30 minutes.
