Description
One of the cornerstones of Italian cuisine, quoted as often as pizza and pasta. If someone set out to create a simple universal salad that everyone enjoys, they would take exactly this route: all you need are sweet, juicy tomatoes, good mozzarella (ideally made from water buffalo milk), high-quality olive oil, and fresh green basil. The trouble is that outside of Italy, it can be a challenge to gather all of the aforementioned 'good' ingredients into one bouquet. While sweet tomatoes are usually available in season, buffalo mozzarella is hard to come by in our neck of the woods. However, strawberries are plentiful: although Caprese with strawberries isn't exactly the traditional Italian version, the juicy red berry pairs particularly well with sweet tomatoes.
Ingredients
- Marinated cherries - 12.3 oz
- Strawberry - 12.3 oz
- Melted Cheese - 8.8 oz
- Basil - 5 sprigs
- Pistachios - 1.1 oz
- Olive Oil - 3 spoons
- Balsamic Vinegar - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the tomatoes in half.
Step 2
Remove the stems from the strawberries, cut the small berries in half or leave them whole, and slice the larger ones into thick pieces.
Step 3
Place the tomatoes, strawberries, and mozzarella in a salad bowl.
Step 4
Tear the basil leaves from the stems, roughly tear them by hand, and add them to the salad.
Step 5
Pour olive oil and balsamic vinegar into a small jar, and add a pinch of salt and pepper.
Step 6
Close the jar with a lid and shake vigorously to combine the sauce and create an emulsion.
Step 7
Drizzle the resulting sauce over the salad and gently toss to avoid damaging the berries and tomatoes.
Step 8
Sprinkle with pistachios and serve.
