- Sweet Potato - 2 pieces
- Wild rice - 3.9 oz
- Peanut Sprouts - 2.5 oz
- Garlic - 4 heads
- Chopped Sage Leaves - 0.4 oz
- Spanish onions - ¼ piece
- Romaine lettuce - ¼ bunch
- Ocean salt - to taste
Step by Step guide
Step 1
Rinse the wild rice and cook for 1 hour over medium heat with added sea salt. Thoroughly wash the sweet potatoes and bake in the oven for 40 minutes at 392°F. Do not peel the sweet potatoes or pierce them with a fork; this will allow their natural sweet caramel flavor to develop fully.
Step 2
Boil the chickpea sprouts for 10 minutes, which can be done together with the wild rice, remembering to skim off any foam from the water. Two minutes before they are done, add the onion and garlic to the water. Once the grains are cooked, mix them together with the chopped red onion, garlic, and parsley.
Step 3
Remove the sweet potatoes from the oven, cut them lengthwise, place a leaf of lettuce inside, and fill with the rice mixture.
