Description
The coals should smolder, not burn — otherwise, the carp will get burnt.
Ingredients
- Carp - 1 piece
- Fresh Rose Hips - 1½ stems
- Garlic - 5 cloves
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Build a substantial fire or light charcoal.
Step 2
Clean the carp by removing the scales and gutting it. Rinse thoroughly inside and out.
Step 3
Place half a sprig of rosemary and five crushed garlic cloves inside the carp. Add pepper and salt.
Step 4
Make three crosswise cuts on each side of the fish and place half a sprig of rosemary in each cut, then sprinkle with pepper and salt.
Step 5
Wrap in foil and bury in the smoldering coals.
Step 6
After 30–35 minutes, unwrap the foil and check if the carp is done. To do this, pierce the fish at the thickest part — the meat should be white. If the carp is undercooked, return it to the coals and cook until done.
