Carrot and Pistachio Salad
Ingredients
- Fig - ½ cup
- Balsamic Vinegar - ¼ cup
- Shallot - 1 head
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 1 cup
- Carrot - 31.7 oz
- Radicchio - 1 bunch
- Chopped pistachios - ½ cup
Step by Step guide
Step 1
Preheat the oven to 190˚C (375˚F). In a medium bowl, combine the figs, vinegar, shallot, salt, and pepper, along with 2 tablespoons of water; while stirring, gradually add ½ cup of olive oil; mix until smooth and set aside.
Step 2
Combine the carrots with ¼ cup of oil and salt, mix, transfer to a baking sheet, and roast until golden brown, about 20 minutes.
Step 3
Meanwhile, heat the remaining olive oil in a 30 cm (12 inch) skillet over medium heat; add half of the radicchio and sauté until slightly tender, about 2-3 minutes.
Step 4
Transfer to a large bowl and mix with the prepared dressing, uncooked radicchio, carrots, and pistachios.
Step 5
Transfer to a serving dish and serve immediately.
