Ingredients
- Wheat Flour - 7.1 oz
- Carrot - 11.6 oz
- Egg white - 2 pieces
- Sugar - 19.4 oz
- Vegetable Oil - 5 fl oz
- Ground Cinnamon - a pinch
- Baking Powder - a pinch
- Activated Baking Soda - a pinch
- Salt - a pinch
- Walnuts - 4.2 oz
- Semi-soft cream cheese - 15.2 oz
- Cottage cheese - 6.3 oz
- Vanillin - a pinch
- Meyer Lemon Juice - 7 fl oz
- Chocolate - 7.1 oz
- Orange zest - to taste
Step by Step guide
Step 1
For the batter, combine flour, baking soda, sugar (200 g), baking powder, vegetable oil, egg, grated carrot (250 g), cinnamon, salt, and walnuts.
Step 2
Pour the batter into a baking pan and bake in the oven for 20 minutes at 170°C.
Step 3
To prepare the cream, combine cream cheese, cottage cheese, vanillin, and fresh lemon juice, and whip into a fluffy mass.
Step 4
Add melted chocolate (melted in a water bath) and mix with the cream.
Step 5
For the carrot syrup, combine water with sugar and bring to a boil, then add peeled grated carrot and cook the syrup for 5 minutes.
Step 6
For the sugar syrup, dissolve sugar (200 g) in water (700 ml), bring to a boil, and simmer over medium heat for 15 minutes.
Step 7
Cut the cooled cake in half lengthwise and soak it with the cooled sugar syrup.
Step 8
Spread the cream on the prepared cake and garnish with lime zest.
