Ingredients
- Carrot - 17.6 oz
- Almond - 7 fl oz
- Onion - 0.1 oz
- Semolina - 1.1 oz
- Nutmeg - 0 oz
- Thyme - 0 oz
- Apple - 4.4 oz
- Breadcrumbs - 2.1 oz
- Mashed Potatoes - 9.9 oz
- Salt - to taste
- Beet chips - to taste
- Vegetable Oil - 1 fl oz
- Parsley - 0.7 oz
Step by Step guide
Step 1
Boil the carrot, then grate it on a fine grater.
Step 2
Peel the apple and cut it into thin strips. You can also grate it using a coarse grater.
Step 3
Transfer the carrots to a saucepan, add almond milk, and heat through.
Step 4
When steam starts rising from the pot, add the apple to the carrots and stir.
Step 5
Add semolina and stir while keeping the saucepan over low heat. Add salt, sugar, nutmeg, thyme, and half a clove of grated garlic. Remove the carrot filling from heat and let it cool.
Step 6
Shape the mixture into round patties and coat them in breadcrumbs. Place them on a flat plate and put them in the freezer for 1–2 hours.
Step 7
In a skillet, heat vegetable oil and fry the patties on both sides until golden brown. Then, finish cooking them in an oven preheated to 383°F for 5 minutes.
Step 8
In a blender, puree the parsley with 20 ml of vegetable oil, then mix the green oil with the mashed potatoes. Plate the mashed potatoes and the cutlet, and garnish with pickled carrots.
