Ingredients
- Carrots - 1½ kg
- Olive Oil - ¼ cup
- Freshly squeezed lemon juice - ¼ cup
- Orange zest - 1 tablespoon
- Chopped Cilantro (Coriander) - 1 tablespoon
- Honey - to taste
- Large Pitted Olives - 1 cup
- Orange - 1 piece
- Italian parsley - to taste
Step by Step guide
Step 1
To prepare the carrot salad with olives, boil the carrots in salted boiling water for 7 minutes. Drain the water and dry them.
Step 2
In a large bowl, mix the oil, lemon juice, orange zest, and cilantro. Add the carrots and mix thoroughly. Cool, stirring occasionally. Drizzle with honey to taste. Cover and chill for 3 hours.
Step 3
Stir again, garnish with orange and parsley, and place the carrots in the center. Serve.
