  • Onion - 7 heads
  • Rice Vinegar - ½ cup
  • Fresh Ginger - 2 tablespoons
  • Carrots - 2 lbs
  • Dried Cranberries - 6.2 oz

Step by Step guide

Step 1

To prepare the carrots with cranberries and ginger, cut the greens off the onions, slice them into strips, and then into large pieces. Chop half of the onions.

Step 2

Place the remaining onions in a blender, add the vinegar and ginger, and blend until smooth. Season with salt and pepper.

Step 3

In a large bowl, combine the carrots and cranberries. Add the greens and chopped onions, pour in the dressing, and mix thoroughly. Serve immediately.
