Ingredients
- Beef - 17.6 oz
- Onion - 2 pieces
- Salad Potatoes - 4 pieces
- Orange Bell Peppers - 2 pieces
- Fresh Mushrooms - 6 pieces
- Courgette - 1 piece
- Tomatoes - 3 pieces
- Spiced Tomato Juice - 8 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Herbs - to taste
Step by Step guide
Step 1
Cut the meat into small pieces, season with salt and pepper.
Step 2
Dice the onion and bell pepper. Slice the mushrooms. Cut the potatoes, zucchini, and tomatoes into 0.5 cm thick rounds.
Step 3
In a heatproof dish with a lid, layer the meat, onion, potato rounds (seasoning them), mushrooms, bell pepper, and zucchini (also seasoning), topped with tomato slices. Pour tomato juice over it. Cover with a lid and place in the oven at medium heat for 3 hours. It is important that the lid fits tightly to the dish, as the juice should not evaporate.
Step 4
Before serving, sprinkle with parsley, cilantro, and basil.
