Ingredients
- Rice - 3.5 oz
- Eggplants - 2 pieces
- Onion - 2 heads
- Garlic - 4 cloves
- Fresh Mint - to taste
- Rack of Lamb - 14.1 oz
- Tomatoes - 14.1 oz
- Olive Oil - 3 tablespoons
- Butter - 0.7 oz
- Wheat Flour - 2 tablespoons
- Milk - ½ cup
- Nutmeg - to taste
- Melted Cheese - 3.5 oz
Step by Step guide
Step 1
Slice the eggplants into rounds, sprinkle with salt, and let them sit for half an hour. Then drain the juice and lightly fry in hot olive oil until semi-cooked. Cook the rice until semi-cooked, drain, and cool.
Step 2
Separately, sauté the chopped onion in olive oil until golden, then add the ground meat and simmer until cooked. At the very end, add finely chopped garlic, mint, and tomatoes. Season with salt, mix everything well, and let it simmer for a couple more minutes on low heat.
Step 3
Prepare the béchamel sauce. For this, sauté 2 tablespoons of flour in a small amount of olive oil, then pour in the milk, stirring constantly until you achieve the consistency of thick sour cream. Add pepper and nutmeg to taste.
Step 4
In a deep baking dish, layer the ingredients: rice, meat, eggplants, sauce, then again rice, meat, eggplants, and sauce. Sprinkle with grated cheese and place in an oven preheated to 392°F. Bake for 20 minutes.
