Ingredients
- Onion - 3 heads
- Sage - 1 bunch
- Peeled chestnuts - ½ cup
- Olive Oil - to taste
- Butter - 0.7 oz
- Stale Bread - 6 pieces
- Ground meat - 26.5 oz
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Peel the onion and chop it coarsely. Remove the leaves from the sage branches and chop them coarsely. Cut the crust off the bread (you should have about half a stale loaf) and break it into large pieces. Pour cold water into a bowl.
Step 2
Heat a large pot over high heat, add a splash of olive oil, and add the butter. Add the onion and sauté for 7-10 minutes until it is browned. Add the sage.
Step 3
Soak the bread in the bowl of water, then squeeze out the water thoroughly and add the bread to the pot, mixing and crushing the large pieces with a wooden spatula. Cook for a few more minutes. Chop the chestnuts or dried fruits coarsely and add them to the pot, mix, keep on the heat for a bit, and then remove. Transfer the mixture to a bowl and let it cool.
Step 4
Add the ground meat, season with salt and pepper. Transfer the mixture to a greased baking dish and bake for 50 minutes until a golden crust forms.
