- Cauliflower - 9.7 oz
- Broccoli - 9.7 oz
- Olive Oil - 1 tablespoon
- Onion - 2 pieces
- Basmati rice - 9.7 oz
- Chicken Broth - 19 fl oz
- Milk - 19 fl oz
- Butter - 1.4 oz
- Roquefort cheese - 3.9 oz
- Wheat Flour - 1.4 oz
- Breadcrumbs - 0.4 oz
- Grated Pecorino Pepato Cheese - 0.9 oz
- Chopped Sage Leaves - 1 tablespoon
- Salt - to taste
- Cayenne Pepper - a pinch
- Nutmeg - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and slice the onion lengthwise into 8 wedges. Sauté the onion in olive oil for 3–4 minutes. Add the uncooked rice, stirring to coat the grains in oil.
Step 2
Pour in the hot broth, add 1 teaspoon of salt, and stir. Cover with a lid, reduce to low heat, and cook for 40–45 minutes. Do not open the lid or stir the rice while cooking to prevent the grains from becoming sticky.
Step 3
While the rice is cooking, prepare the sauce. In a saucepan, combine the milk, butter, flour, and cayenne pepper. Place over medium heat and cook, whisking constantly, until the mixture thickens and becomes smooth. Reduce the heat and cook for another 5 minutes. Stir in the Parmesan cheese and wait for it to melt. Add nutmeg, salt, and black pepper.
Step 4
Steam the cauliflower and broccoli.
Step 5
Transfer the cooked rice to a baking dish, top with the cauliflower and broccoli florets, and pour the sauce over. Sprinkle with a mixture of Parmesan, breadcrumbs, and parsley.
Step 6
Place the dish under the hottest broiler and bake until the sauce bubbles and turns golden brown, about 2–3 minutes.
