Cauliflower in Orange Sauce
Ingredients
- Oranges - 2 pieces
- Cauliflower - 35.3 oz
- Lemon - 1 piece
- Shallot - 0.1 oz
- Carrot - 1 piece
- Dry White Wine - 10 fl oz
- Saffron - ½ teaspoon
- Coriander essential oil - a pinch
- Salt - a pinch
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Using a knife, thinly peel the zest from the orange, being careful not to include the white pith. Cut into thin strips.
Step 2
Separate the cauliflower into florets.
Step 3
Slice the shallot into thin half-rings.
Step 4
Slice the carrot.
Step 5
Juice the oranges and lemon. Strain through a sieve.
Step 6
Add the wine and saffron to the juice. Add a pinch of coriander seeds. Bring the sauce to a boil.
Step 7
Place the cauliflower, carrot, shallot, and zest into a heavy-bottomed pot. Pour half of the sauce over them. Season with salt and pepper.
Step 8
Simmer the vegetables until tender.
Step 9
Reduce the second half of the sauce over low heat, uncovered, until it is reduced by half. Drizzle over the cooked vegetables.
