Cauliflower Keto Rolls with Salmon
Ingredients
- Cauliflower - ½ head
- Garlic - 2 cloves
- Salt - 1 teaspoon
- Butter - 1 piece
- Chicken Egg - 1 piece
- Courgette - ½ piece
- Avocado - 0.3 piece
- Lightly Salted Red Fish - 2.5 oz
- Dried Nori Seaweed - 2 pieces
- Semi-soft cream cheese - 3 tablespoons
Step by Step guide
Step 1
Pour water over the cauliflower and add salt. Bring to a boil and reduce the heat.
Step 2
Cut the garlic in half.
Step 3
Add the garlic to the cauliflower and cover with a lid.
Step 4
After 18 minutes, drain the water.
Step 5
Mash with a potato masher, adding the butter.
Step 6
Add the egg and mix. Let the mixture cool. If there is too much liquid left, place the puree in a sieve over a pot until it drains. You can also evaporate it over low heat while stirring constantly or in the oven.
Step 7
Peel the cucumber and cut into slices about 7–8 mm thick.
Step 8
Do the same with the avocado.
Step 9
Slice the salmon into pieces about 12–14 mm wide.
Step 10
Press the puree into a sushi mat or spread a thick layer on a nori sheet. Then spread with cream cheese.
Step 11
Top with fish, avocado, and cucumber.
Step 12
Roll the nori sheet around the filling or press the roll onto the nori sheet.
Step 13
Cut into rolls of desired thickness, rinsing the knife under cold water each time.
Step 14
Serve with soy sauce!
