Description
One head of cauliflower will yield two steaks, and the trimmings can be used for other dishes.
Ingredients
- Cauliflower - 1 piece
- Vegetable Oil - 1 fl oz
- Butter - 1.1 oz
- Wheat Flour - 1 tablespoon
- Blue Cheese - 1.8 oz
- Milk - 7 fl oz
- Pumpkin seed oil - 0.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 392°F.
Step 2
Cut the cabbage head lengthwise along the core into steaks about 2–3 cm thick.
Step 3
Place the steaks in a single layer on a preheated baking sheet that has been greased with vegetable oil.
Step 4
Using a brush, coat the steaks with vegetable oil, then season with salt and pepper.
Step 5
Place in the middle of the oven for 30 minutes, turning it over once during cooking.
Step 6
Crumble or finely chop the cheese.
Step 7
Melt the butter in a saucepan over medium heat.
Step 8
Stir in the flour and cook, stirring, for about 1 minute, until the butter and flour are well combined.
Step 9
While continuing to stir, gradually pour in the milk until the sauce is smooth and creamy.
Step 10
Bring the sauce to a boil and stir in the cheese.
Step 11
Continue cooking until the cheese is melted into the sauce and the sauce has thickened slightly. At the end, add salt and pepper to taste.

Drizzle the cauliflower steak with the sauce and sprinkle with toasted pumpkin seeds.
