Ingredients
- Pork Mince - 15.9 oz
- Onion - 2 heads
- Cauliflower - 17.6 oz
- Garlic - 3 cloves
- Grated Pecorino Pepato Cheese - 1.8 oz
- Milk - 10 fl oz
- Breadcrumbs - 1 tablespoon
- Olive Oil - 1 tablespoon
- Butter - 0.9 oz
- Wheat Flour - 0.9 oz
- Salt - a pinch
- Ground Black Pepper - a pinch
- Dried Rosemary - a pinch
- Dried Chamomile - a pinch
- Ground Nutmeg - a pinch
Step by Step guide
Step 1
Chop the onion and garlic, then sauté in olive oil over medium heat for 3-4 minutes. Add the ground meat. Season with salt and pepper, then add thyme and rosemary. Cook until done, about 8-10 minutes.
Step 2
Transfer the cooked filling onto paper towels to absorb any excess grease.
Step 3
Divide the cauliflower into florets and boil in salted water for 6-7 minutes. Drain in a colander and let it cool slightly. It's best if the cauliflower remains a bit crunchy. Do not overcook it.
Step 4
For the sauce, melt the butter in a saucepan, add the flour, and whisk well. Remove from heat and, while stirring vigorously, add the milk. Watch out for lumps; there shouldn't be any. Return the sauce to low heat and continue stirring. Season with salt, but be careful not to overdo it, as the cheese is also salty. Add pepper and nutmeg to taste. As soon as the sauce starts to come to a boil, quickly remove it from the heat and add 30 g of grated cheese, mixing well once more. This preparation method uses the well-known sauce 'Béchamel', which you can read more about in the history of this recipe.
Step 5
We're almost there! First, layer the minced meat in a baking dish, then add the cauliflower on top, and evenly pour the sauce over it. Sprinkle with breadcrumbs and grated cheese. Bake in the oven at 200°C (about 400°F) for 15-20 minutes until golden brown.

Serve with mashed potatoes!
