Health Benefits of Cauliflower. Cauliflower contains mineral salts, proteins, and carbohydrates. The proteins in cauliflower are rich in valuable amino acids (arginine, lysine). It has a low fiber content, which, due to its delicate structure, is easily digested by the body. Most of the nitrogenous compounds in cauliflower are easily digestible protein compounds, which is why cauliflower is better absorbed by our bodies than other types of cabbage. In terms of nutrient content and flavor quality, cauliflower surpasses all other types of cabbage. For example, cauliflower contains 1.5 times more protein and 2-3 times more ascorbic acid than white cabbage. Additionally, cauliflower has a higher content of vitamins C, B1, B6, B2, PP, and A. The heads of the cauliflower contain potassium, calcium, sodium, phosphorus, iron, and magnesium. Cauliflower is rich in pectin substances, malic and citric acid, folic and pantothenic acid. Regular consumption of cauliflower reduces the risk of breast cancer in women and prostate cancer in men. Cabbage juice is recommended for gastritis, diabetes, bronchitis, kidney dysfunction, and liver diseases.

- Cauliflower - 17.6 oz
- Ground coriander - ½ spoons
- Ocean salt - ½ spoons
- Cashew - 1 glass
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
Wash a medium-sized head of cauliflower. Place it whole in a pot and cover with 1 cup of water. Cover with a lid and simmer over medium heat until it becomes tender, about 15-20 minutes.
Step 2
Blend half a teaspoon of ground coriander, half a teaspoon of sea salt, lemon juice, and one cup of raw cashews in a blender or food processor.
Step 3
When the cauliflower is ready, pour 1/2 cup of the broth from it into a blender with the ground nuts and blend until you achieve a thick paste. You can add more hot water to reach your desired consistency.
Step 4
Serve the cauliflower whole on a platter drizzled with sauce. Sprinkle with herbs. Cut into wedges and arrange on plates.
Step 5
You can add herbs to the nut paste to create a green nut paste.
Step 6
You can add a few pine nuts to the cashews.
Step 7
Cabbage can certainly be eaten raw.
