Cauliflower with Yellow Lentils and Coconut Curry

Ingredients

  • Vegetable Oil - 1 tablespoon
  • Onion - 1 head
  • Ginger - ½ teaspoon
  • Red curry paste - 3 tablespoons
  • Yellow Lentils - 7.1 oz
  • Vegetable Broth - 1½ liters
  • Shredded Coconut - 3 tablespoons
  • Cauliflower - 1 piece
  • Basmati rice - to taste
  • Chopped Cilantro (Coriander) - a pinch
  • Mango Chutney - to taste
  • White bread - to taste
  • Garlic - 2 cloves

Step by Step guide

Step 1

Heat the oil in a large skillet, then add the onion, garlic, and ginger.

Step 2

Sauté for 5 minutes, add the curry paste, then lightly fry for 1 minute before adding the lentils, broth, and coconut. Bring the mixture to a boil and cook for 40 minutes or until the lentils are soft.

Step 3

During the last 10 minutes of cooking, add the cauliflower. Divide the rice among 4 plates, top with the curry, and sprinkle with cilantro leaves and coconut. Serve with mango chutney and bread.
