  • Grated Pecorino Pepato Cheese - 1.8 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Butter - 1.8 oz

Step by Step guide

Step 1

Peel the celery heads and chop them randomly, cover with milk up to 3/4 and boil (without salt) until the root is tender.

Step 2

Blend the celery, adding milk until the desired consistency is reached.

Step 3

Add grated Parmesan or Gruyère cheese.

Step 4

In the hot purée, add butter — the amount depends on your calorie concerns. Season with salt and pepper.
