Description
This is my original recipe, named after Grandma Mary — a classic theoretical Georgian grandmother... for the image...) The original name of the recipe is Grandma Mary's Chakhokhbili.
Ingredients
- Ground coriander - 1 bunch
- Poultry - 1 piece
- Onion - 2 pieces
- Garlic - 5 cloves
- Plums - 5 pieces
- Turmeric - to taste
- Georgian herb blend - 1 tablespoon
- Ground Cumin - to taste
- Chili jam - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Sugar - to taste
- Tomatoes - 5 pieces
- White Part of Leek - 3.5 oz
- Smoked salt - 2 tablespoons
Step by Step guide
Step 1
Finely chop 2 large onions, slice the leek (only the white and light green parts — about half of a small stalk) and sauté in vegetable oil (not olive oil!) until translucent. Once they are translucent, sprinkle with dry spices and sauté for another 5–7 minutes.
Step 2
Cut the chicken into small pieces (do not pre-fry!) and add it to the onions, simmer together for about 3 minutes.
Step 3
While the chicken is simmering, chop 5–6 large tomatoes, 5 large blue plums, crush and peel 6 cloves of garlic.
Step 4
Add white wine to the chicken and continue to simmer for another 10 minutes over low heat.
Step 5
Add all the tomatoes, chopped plums, and whole cloves of garlic to the chicken, pour in hot water to almost cover the meat.
Step 6
Place a large bunch of cilantro on top. Bring to a boil over high heat, then reduce to low heat and simmer covered for about 1.5 hours.
Step 7
At the end of cooking, taste for salt, sugar, and pepper.
