Chakhokhbili (Without Wine)
Ingredients
- Poultry - 3 lbs
- Onion - 4 pieces
- Tomatoes - 4 pieces
- Orange Bell Peppers - 2 pieces
- Garlic - 4 cloves
- Vegetable Oil - to taste
- Adjika - 1 teaspoon
- Parsley - to taste
- Ground coriander - to taste
- Mild Chili Spice - 1 piece
- Cilantro - to taste
Step by Step guide
Step 1
Cut the chicken into standard small sections — drumstick, thigh, wing, etc. Rinse the pieces thoroughly. Place them in a pot (preferably thick-walled), add 2 tablespoons of vegetable oil, and lightly salt (1 teaspoon). Cover with a lid and simmer on very low heat for about 20 minutes. Do not add water.
Step 2
While the chicken is simmering, finely chop 4 onions and sauté them separately in vegetable oil. Do not overcook — it's better to undercook than overcook.
Step 3
After 20 minutes of simmering, add the sautéed onions to the pot with the chicken. The simmering process continues with the onions present. Meanwhile...
Step 4
In the meantime, put 2 tablespoons of tomato paste in the pan where you sautéed the onions, and fry it for 1 minute over high heat. During this time, chop 4 tomatoes into small pieces. Add them to the tomato paste and sauté-simmer together for another 2 minutes. Once done, add the tomato mixture to the pot with the chicken and onions... You can remove the pan — it has already served its purpose. Meanwhile...
Step 5
Calmly chop 2 bell peppers and add them to the same pot.
Step 6
Check the amount of liquid in the pot — add a little water so that the chicken and vegetables are not overly exposed. But do not drown them! Chakhokhbili is not a soup!
Step 7
Now add 1 teaspoon of real adjika. Finely chop half a bunch of parsley and cilantro (the remaining herbs will be added at the end) and sprinkle them into the pot. Chop the chili pepper and add it as well. There are different types of chili peppers — very hot and not so hot, so consider the outcome — will it be too spicy for you and your diners?
Step 8
Continue to simmer the chicken with the vegetables for another 25–40 minutes. Doneness is determined by the chicken — it should be very tender, falling apart into pieces...
Step 9
If everything is ready, turn off the heat and quickly add the spices and salt. Ground coriander — half a teaspoon, finely chopped garlic — 4 cloves, salt — to taste. Also add finely chopped fresh herbs — cilantro and parsley. Mix everything and cover with a lid. After 10 minutes (the spices should take effect), chakhokhbili can be served.
