Mix the flour, olive oil, salt, yeast, and 250 ml of water. Roll the resulting dough out with a rolling pin on a floured surface until you achieve a circle that is 1.5 mm thick.

Spread grated mozzarella and small pieces of gorgonzola over the dough. The key here is not to buy fresh mozzarella, as it won't grate well; you should opt for a firmer type that is suitable for pizza.

Place the pizza in an oven preheated to 356°F for seven to ten minutes. The crust should become golden brown but not burnt, and the cheese should melt without turning into a hard layer. Ideally, it's best to cook pizza in a specialized oven, but not many people have one at home.

As soon as the pizza looks ready, you can take it out. Use a spoon to spread the melted pieces of gorgonzola evenly over the surface of the pizza, so it is covered with a thin layer of cheese. You can leave the crust at the edges without cheese, if you prefer.

Next, you need to peel the fresh pear — it's best to use a vegetable peeler. You can also do this with a knife, but in that case, you must be extremely careful to minimize damage to the flesh of the pear.

Slice the pear into thin rounds using a sharp knife, or preferably a mandoline or slicer. The core of Conference pears is not tough enough to require removal. However, it is best to discard any seeds that may appear while slicing.

Cover the entire surface of the pizza with the resulting circles. There's no need to strictly adhere to geometric principles; feel free to let your imagination run wild and arrange the pears in circles, zigzags, or squares.

Cut the pizza into six slices. It's best to use a pizza cutter, as its handle is designed for this purpose and the serrated blade makes slicing easier. This way, the pieces will be even and neat, and it will require minimal effort.
