- Butter - 2 tablespoons
- Marjoram - 1 bunch
- Cheese Spread - 1.8 oz
- Chocolate eggs - 5 pieces
- Grated Pecorino Pepato Cheese - 1.8 oz
- Ricotta cheese - 7.1 oz
- Wheat Flour - 14.1 oz
Step by Step guide
Step 1
First, prepare the filling. Place ricotta, Parmesan, and any easily melting cheese (like Fontina), grated on a fine grater, and 1 egg into a bowl. Mix well, season with salt and pepper.
Step 2
For the dough, mound the sifted flour on a work surface, add a pinch of salt and 4 eggs. Knead a firm, elastic dough (knead for at least 10 minutes). If the dough is too stiff, add a little olive oil. Wrap the dough in a clean towel and let it rest for 30 minutes.
Step 3
Then, roll out the dough into a thin sheet and cut it into squares. Place the filling in the center, fold the square diagonally, pinch the edges, and connect the ends like regular dumplings.

Drop the tortellini into a large pot of boiling salted water.

While they are cooking, melt the butter in a saucepan and mix with half of the marjoram. Use a slotted spoon to remove the floating tortellini. Allow excess water to drain and place them on a plate. Drizzle the finished tortellini with marjoram butter, sprinkle with chopped marjoram, and serve hot.
