Cheesy Meat Baked Pasta
Ingredients
- Ground meat - 14.1 oz
- Pasta (corkscrew) - 3.5 oz
- Russian Cheese - 2.8 oz
- Parmesan Cheese - 1.8 oz
- Cream - 6 fl oz
- Nutmeg - a pinch
- Paprika - a pinch
- Onion - 1 head
- Garlic - 3 cloves
- Olive Oil - 1 tablespoon
- Passata Tomato Sauce - 2 tablespoons
- Cinnamon - 1 stick
- Ground clove - 3 pieces
Step by Step guide
Step 1
Finely chop the onion and sauté it in a large skillet over low heat for 15 minutes until it softens and becomes almost transparent, then add the finely chopped garlic.
Step 2
While the onion is sautéing, cook the pasta in salted water. Boil until al dente. They should remain firm and slightly undercooked.
Step 3
Add the ground meat to the onion (you can use any ground meat you prefer; I cook with lamb, but you can use a mix of pork and beef). When it changes color, add salt, pepper, paprika (preferably smoked, if available), cinnamon, nutmeg, and cloves. Continue to sauté over fairly high heat until the meat starts to brown, stirring. Then add the tomato paste and a little water (a quarter cup). Mix thoroughly. Simmer for about 5 minutes; the water should mostly evaporate. Turn off the heat.
Step 4
While the meat is cooking, separately grate the Russian cheese and the Parmesan cheese (you can skip the Parmesan, but it makes it more authentic).
Step 5
When the meat is ready, add the pasta to the skillet and mix everything together. Then transfer it all to a baking dish, preferably a small one with high sides (like a pot suitable for oven baking). Layer the pasta, Russian cheese, and drizzle some cream on top. Sprinkle with Parmesan and place in an oven preheated to 356°F for about 20 minutes, until a golden crust forms.
Step 6
Remove from the oven and let cool for about 15 minutes.
