  • Mayonnaise - 3.5 oz
  • Cheshire Cheese - 2 pieces
  • Romaine lettuce - 1.4 oz
  • Pickled Cauliflower - 1.4 oz
  • Potato - 9.9 oz
  • Tomatoes - 3.5 oz
  • Garlic - 1 clove
  • Lime - 1 piece
  • Anchovies - 0.2 oz
  • Soy Sauce - 0 fl oz
  • Rosemary - 0.1 oz
  • Cilantro - 0.4 oz
  • Olive Oil - 0 fl oz
  • Safflower Oil - 10 fl oz
  • Hamburger Bun - 2 pieces

Remove the cutlets from the refrigerator and let them sit at room temperature for 15 minutes; peel and slice the onion into rings, slice the cucumber lengthwise into thin pieces, cut the tomatoes into thin rings, separate the rosemary leaves from the stems and chop them finely, crush and peel the garlic, finely chop the anchovies and garlic, and mash them into a paste with the flat side of a knife.

Cut the potatoes into wedges, drizzle with olive oil, season with salt and pepper, and bake in a preheated oven at 428°F for 20 minutes.

Mix the mayonnaise with the garlic paste, add the juice of half a lime, anchovies, rosemary, soy sauce, season with pepper, and stir thoroughly.

In a saucepan, heat 300 ml of sunflower oil; coat the onion rings in flour and fry them in the oil in small batches for 4 minutes, ensuring the onions do not stick together, until golden brown. Transfer the onions to a paper towel and let them dry completely; fry the bacon over high heat for 30 seconds on each side, transfer to a paper towel, and cut the bacon in half.

Brush the buns with olive oil and grill them on a hot grill pan for 30 seconds until they have black grill marks, pressing the center of the bun lightly with your hand; grill 2 patties on the grill pan for 1 minute on each side, generously peppering them when flipping; grill the remaining 2 patties on one side on the hot grill pan for 1 minute, flip, pepper, top each patty with a slice of cheddar cheese, and grill for another minute.

Spread sauce on the bottom buns, layer with salad, a patty with cheese, a second patty, tomato, cucumbers, bacon, fried onions, and cilantro without the stems; spread sauce on the top buns; set aside any remaining sauce.
