Description
Recipe by John Smith, bar manager of a local restaurant. The tartness and acidity of the cherries in this drink perfectly complement the rich, sweet, slightly woody flavor of the bourbon. It results in a very smooth, almost dessert-like infusion, but it's definitely not a light drink.
Ingredients
- Marinated cherries - 21.2 oz
- Raw cane sugar - 8.8 oz
- Bourbon - 23 fl oz
- Oranges - 2 pieces
- Boiling water - 7 fl oz
Step by Step guide
Step 1
Place the frozen cherries in a container and pour bourbon over them.
Step 2
Remove the zest from the oranges, carefully cut off any remaining white pith (otherwise the infusion will taste bitter), finely grate it, and add it to the mixture of bourbon and berries.
Step 3
Tightly seal the container with the infusion and leave it in a dark place at room temperature for 4 days.
Step 4
Dissolve the sugar in 200 ml of boiling water, allow it to cool, and then add it to the infusion. Let the infusion sit for another day.
Step 5
Mash the berries and strain the infusion through a cheesecloth.
Step 6
Pour into bottles and seal. Serve well chilled, both on its own and as a strong component in cocktails.
