Description
Star anise and cloves elevate the flavor of cherry to a new level: this is no longer just kissel — it's a gastronomic statement. We recently mastered this recipe in our editorial kitchen and we are very pleased with it.
Ingredients
- Cherry - 10.6 oz
- Star anise - 1 piece
- Clove - 2 pieces
- Sugar - 3.2 oz

Step by Step guide
Step 1
Prepare all the ingredients. For fresh cherries, remove the pits in advance.
Step 10
Serve the cherry jelly hot or chilled.
Step 2
Sprinkle the cherries with sugar and let them sit for 1 hour to release their juice.
Step 3
In a pot, bring 1 liter of water to a boil with star anise and cloves. Boil for 5 minutes.
Step 4
Add cherries with sugar and juice.
Step 5
Bring to a boil and cook for 5–7 minutes.
Step 6
Remove and discard the star anise and cloves, as they are no longer needed.

Mix the remaining water with the starch until smooth.
Step 8
Pour the starch solution into the pot and bring it back to a boil.
Step 9
When the jelly becomes smooth and starts to thicken, remove it from the heat.
