Description
You can use any salad greens; I had a mix of arugula, spinach, Swiss chard, and lettuce. I used half a package, but you can add the whole thing.
Ingredients
- Mixed salad greens - 1.8 oz
- Melted Cheese - 1 piece
- Orange Bell Peppers - 1 piece
- Canned Corn - 1 can
- Courgette - 1 piece
- Chicken Egg - 1 piece
- Olive Oil - 2 tablespoons
- Soy Sauce - 1 tablespoon
- Meyer Lemon Juice - 1 tablespoon
- Balsamic Vinegar - 1 teaspoon
Step by Step guide
Step 1
Boil the egg and chop it coarsely.
Step 2
Chop the cucumber, pepper, and mozzarella coarsely, then mix with the salad greens and corn.
Step 3
For the dressing, mix olive oil, balsamic vinegar, soy sauce, and lemon juice separately, and dress the salad just before serving.
