Description
Chicago pizza resembles an open pie more than traditional pizza. The essence lies in the enormous amount of filling, which is much greater than that of a standard pizza: the crust on this pizza is 2–3 centimeters high. In our version, the filling consists of tomatoes and cheese. Unlike regular pizza, the cheese is placed at the very bottom layer of the filling, so it doesn't burn.
Ingredients
- Dry yeast - 0.3 oz
- Sugar - 1 tablespoon
- Water - 4 fl oz
- Wheat Flour - 8.5 oz
- Corn Flour for Polenta - 0.5 oz
- Butter - 1.1 oz
- Vegetable Oil - 1 tablespoon
- Olive Oil - 1 fl oz
- Onion - 1 head
- Oregano - 1 tablespoon
- Chili Flakes - ½ spoons
- Garlic - 3 cloves
- Baking Tomatoes - 28.2 oz
- Passata Tomato Sauce - 2 spoons
- Pizza Mozzarella Cheese - 6 oz
- Grated Pecorino Pepato Cheese - 1.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Mix the yeast with warm water and sugar, and let it sit for a few minutes. In a mixing bowl, combine the wheat flour and corn flour, add half a teaspoon of salt, vegetable oil, and melted butter. Pour in the yeast mixture and knead until you have a smooth dough.
Step 3
Knead the dough by hand on a floured surface. Transfer it to an oiled bowl, cover, and place in a warm spot for one hour.
Step 4
In a skillet, heat olive oil and sauté the chopped onion with a pinch of salt, oregano, and chili flakes until golden brown.
Step 5
Then add the minced garlic, tomato paste, and peeled tomatoes. Simmer over medium heat for about 20 minutes, until the sauce thickens. Season with salt and pepper to taste.
Step 6
Roll out the rested dough on a floured surface. The sheet should be large enough to cover the sides of the pan in which the pizza will be baked (the recipe is designed for a 24 cm diameter pan). Transfer the dough to the pan, evenly pressing it into the bottom and up the sides, and trim any excess with a knife.
Step 7
Brush the edges of the dough with olive oil to give the crust a nice shine. Layer the bottom with thin slices of mozzarella.
Step 8
Drizzle with tomato sauce on top and sprinkle with grated Parmesan cheese.
Step 9
Place the pizza in the oven preheated to 419°F for 15 minutes. Then, cover the edges of the crust with foil to prevent burning, and leave the pizza in the oven for another 10 to 15 minutes.
Step 10
Serve.
