Ingredients
- Dashi powder - 20 fl oz
- Sake - 2 tablespoons
- Soy Sauce - 1 tablespoon
- Salt - a pinch
- Mirin - 2 teaspoons
- Chicken Thighs - 7.9 oz
- Shimeji mushrooms - 4 pieces
- Scallions - 4 stalks
- Chinese green beans - 2 pieces
- Tofu - 1 piece
- Udon Noodles - 8.8 oz
- Chives - 1 bunch
- Peeled Cooked Shrimp - 4 pieces
Step by Step guide
Step 1
In a wok, pour in the dashi, sake, soy sauce, and add salt and mirin. Bring to a boil and add the diced chicken, cover with a lid, and reduce the heat. Simmer for 3 minutes until the chicken is cooked.
Step 2
Add the remaining ingredients, except for the shrimp, and cook for another 2-3 minutes. Remove from heat, add the shrimp, and let sit for 2 minutes. Divide into 2 bowls.
