Chicken Baked in Pineapple with Cheese
Ingredients
- Pineapple - 1 piece
- Chicken fillet - 17.6 oz
- Cheese Spread - 3.5 oz
- Mayonnaise - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Garlic - 1 clove
Step by Step guide
Step 1
Cut the chicken fillet into cubes.
Step 2
Add 1 tablespoon of mayonnaise.
Step 3
Add salt.
Step 4
Add pepper.
Step 5
Add minced garlic using a garlic press.
Step 6
Mix and let marinate for at least 1 hour.
Step 7
Cut the ripe pineapple in half.
Step 8
Make cuts in the flesh lengthwise and crosswise, without reaching the skin to avoid damaging it.
Step 9
Carefully remove all the flesh using a knife.
Step 10
Fill the pineapples two-thirds full with the marinated fillet.
Step 11
Top with the pineapple flesh, previously cut into cubes the same size as the fillet. At this stage, wrap the pineapple in two layers of foil, completely covering the tail but leaving the top with the filling open.

Bake in the oven for 40–50 minutes at 392°F, then remove, sprinkle with cheese on top, and bake for another 10 minutes until the cheese melts.
Step 13
Serve the dish hot.
