- Duck wings - 2 lbs
- Semi-Smoked Sausage - 7.1 oz
- Mandarins - 2 pieces
- Onion - 2 heads
- Carrot - 2 pieces
- Celery stalk - 1 piece
- Sage - ⅓ bunches
- Thyme - ⅓ bunches
- Rosemary - ⅓ bunches
- Dried cranberries with sugar - 7.1 oz
- Salted Butter - 8.8 oz
- Bay leaf - 2 pieces
- Honey - 1 tablespoon
- Wheat Flour - 3 spoons
- Salt - to taste
- Ground Black Pepper - to taste
- Nutmeg - to taste
Step by Step guide
Step 1
For this dish, you need a large chicken weighing about 3 kg, or two smaller ones, each weighing 1.5 kg.
Step 2
Finely chop the cranberries, two sprigs of sage, a sprig of rosemary, and five sprigs of thyme. Mash together with softened butter.
Step 3
Place the chicken breast-side up, carefully insert a tablespoon under the skin of the breasts to separate it from the meat, then spoon in the butter mixture and distribute it evenly.
Step 4
Grease the insides of the chickens with the remaining butter. Stuff each with two halves of a mandarin, place them on a baking sheet, and put in an oven preheated to 392°F. After five minutes, reduce the temperature to 180 degrees and leave for 40 minutes.
Step 5
Crush the wings with a knife, place them in a skillet, and add coarsely chopped carrots, onion, celery, bacon, bay leaves, star anise, nutmeg, and honey. Put in the oven for twenty minutes at 392°F.
Step 6
Wrap the cooked chicken in foil and let it rest. Place the wings in a pot, add 800 ml of warm water, bring to a boil, and add flour to thicken the sauce. Reduce the sauce and strain it twice through a sieve. Serve the chicken with the sauce.
