Ingredients
- Skin-On Chicken Breasts - 2 pieces
- Onion - 2 pieces
- Celery stalk - 0.7 oz
- Orange Bell Peppers - 1 piece
- Orange Bell Peppers - 1 piece
- Kefalotyri cheese - 8.8 oz
- Minced garlic - 4 cloves
- Oregano - 2 spoons
- Olive Oil - 6 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the chicken breast into large cubes and marinate in 1 tablespoon of olive oil with salt and pepper.
Step 2
Sear the chicken breast in a skillet until golden brown. Remove from heat and set aside.
Step 3
Peel and chop the onion and celery, slice the bell pepper into half-moons, mince the garlic, and sauté the vegetables in 2 tablespoons of olive oil in a skillet until they are soft.
Step 4
Preheat the oven to 356°F. Divide the vegetables and chicken breast into 4 equal portions.
Step 5
Place pieces of chicken breast on parchment paper, sprinkle with oregano, and top with vegetables. Add cheese, cut into 1.5 cm cubes, to each portion. Fold the edges of the parcel.
Step 6
Place the envelopes on a greased baking tray, sprinkle with water, and bake for about 30 minutes, until the chicken is tender and juicy.
Step 7
Drizzle the finished dish with a small amount of olive oil and serve.
