Ingredients
- Skin-On Chicken Breasts - 2 pieces
- Dry White Wine - 3 fl oz
- Soy Sauce - 3 spoons
- Ocean salt - to taste
- Ground Black Pepper - to taste
- Fresh Rose Hips - 2 stalks
- Tomatoes - 2 pieces
- Courgette - 1 piece
- Sweet Pepper - 1 piece
- Olive Oil - 3 spoons
- Honey - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
Step by Step guide
Step 1
Thoroughly wash the chicken breast and place it in a bowl. Pour in white wine and soy sauce. Let it marinate for 2 hours (or longer if desired).
Step 2
Once the chicken breast has finished marinating, season it with salt and pepper, place it on a baking sheet (I made mine from foil), and drizzle a little olive oil over it. Top each breast with a sprig of rosemary.
Step 3
Prepare the dressing. To do this, combine olive oil, balsamic vinegar, and honey in a separate bowl.
Step 4
Wash the vegetables thoroughly, slice the tomatoes into rings, and cut the rest into cubes. Place them in a bowl and mix with the dressing.
Step 5
Place the vegetables together with the chicken breast.
Step 6
Bake at 356°F for 35 minutes.
