Ingredients
- Skin-On Chicken Breasts - 4 pieces
- Canned Pineapple Chunks - 3.5 oz
- Hard Cheese - 3.5 oz
- Garlic - 1 clove
- Mayonnaise - 1 tablespoon
- Breadcrumbs - 2 tablespoons
- Egg white - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the chicken breast, rinse it, and cut a 'pocket' in the breast, being careful not to cut through. Season the finished 'pocket' with salt and pepper inside and out.
Step 2
Press the garlic and mix it with mayonnaise. Spread the garlic-mayonnaise mixture inside the 'pocket' of the breast.
Step 3
For the filling: drain the liquid from the pineapples and cut them into cubes. Grate the cheese on a coarse grater. Mix the pineapples with the cheese and add a little mayonnaise to make the mixture sticky. Fill the chicken 'pocket' with the cheese-pineapple mixture and secure the opening with toothpicks.
Step 4
In a bowl, beat the egg with a fork and season it with salt. Place the breadcrumbs on a separate plate. Dip the breast into the egg, then roll it in the breadcrumbs.
Step 5
Fry the breast in a pan with heated vegetable oil on both sides until golden brown, then reduce the heat and continue frying until cooked through.
