Ingredients
- Skin-On Chicken Breasts - 4 pieces
- Parmesan Cheese - 1.1 oz
- Thyme - 2 sprigs
- Lemon - 1 piece
- Olive Oil - to taste
- Prosciutto - 6 slices
Step by Step guide
Step 1
Cover the chicken breast fillets with a piece of plastic wrap and flatten them with the bottom of a pot to a thickness of 1 cm.
Step 2
Grate the parmesan. Remove the thyme leaves from the stems. Carefully make a crosswise cut on the inner side of the breasts. Season with pepper (no need to salt, the prosciutto contains enough salt). Sprinkle most of the thyme over the breasts. Grate a little lemon zest on top, sprinkle with parmesan. Lay 3 slices of prosciutto slightly overlapping on each breast. Drizzle with olive oil and sprinkle with the remaining thyme.
Step 3
Heat a large skillet over medium heat. Remove the plastic wrap and carefully place the breasts in the skillet with the prosciutto side down. Drizzle with olive oil. Cook for 3 minutes, flip, cook for another 3 minutes, flip again, and cook for another 30 seconds to brown the prosciutto nicely.
Step 4
Serve the breasts whole, or slice them into wide pieces and arrange them in a pile on a plate. Serve with lemon slices and drizzle with olive oil.
