Chicken Breasts with Cumin and Sweet-Sour Red Cabbage
Ingredients
- Spices - ½ teaspoon
- Toasted Cumin Seeds - 1 teaspoon
- Olive Oil - 1 tablespoon
- Skin-On Chicken Breasts - 2 pieces
- Bacon - 1 slice
- Red Currant - 3 cups
- Shallot - 2 pieces
- Chicken Broth - ½ cup
- Brown Sugar - 1 tablespoon
- Balsamic Vinegar - 2½ tablespoons
- Chives - to taste
Step by Step guide
Step 1
Sprinkle the chicken breasts with cumin and half of the spices, then with salt and pepper.
Step 2
Heat a large skillet over medium heat. Add the sliced bacon and fry until crispy. Transfer to a plate.
Step 3
In the skillet with the bacon fat, add the chicken and fry until cooked through, about 5 minutes on each side. Transfer to a plate and cover with foil.
Step 4
In the skillet, add the shredded cabbage, finely chopped shallots, broth, vinegar, sugar, and remaining spices. Cook over medium heat until the liquid evaporates and the cabbage is glazed and slightly tender but still a bit crunchy, about 6 minutes. Add the bacon. Season with salt and pepper.
Step 5
Cut the chicken into small pieces and place on 2 plates. Top with the cabbage and sprinkle with chopped chives.
