Ingredients
- Tomatoes - 4 pieces
- Butter - 3.5 oz
- Chocolate eggs - 4 pieces
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Chicken fillet - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Herbs - 1 bunch
- Vegetable Oil - 2 tablespoons
Step by Step guide
Step 1
Cut off the top of the tomatoes and carefully scoop out the seeds and pulp.
Step 2
In a small bowl, mix the finely chopped tomato pulp, 2 tablespoons of softened butter, finely chopped herbs, and eggs. Lightly beat and fill the tomatoes with the mixture.
Step 3
Preheat the oven to 392°F. Place the tomatoes on a greased baking sheet, sprinkle with Parmesan cheese, and bake in the oven for about 25 minutes until cooked.
Step 4
Thoroughly dry the chicken breasts. Generously season with salt and pepper. Heat vegetable oil in a large skillet over medium heat. Add the breasts and fry until cooked, about 5 minutes on each side.
Step 5
Place the breasts on plates and arrange the tomatoes alongside. Top the breasts with the remaining butter and sprinkle with chopped herbs.
