Description

For this dish, a medium heat is needed, so that you can hold your hand over the coals for about 3–4 seconds. The simplest way to achieve this is to raise the grill rack slightly above the coals. If the rack doesn't lift, just wait until the coals are covered with a white ash.

Ingredients

  • Skin-On Chicken Breasts - 2 pieces
  • Semi-Smoked Sausage - 8.8 oz
  • Grated Chocolate - 2.5 oz
  • Melted Cheese - 2.5 oz
  • Grated Pecorino Pepato Cheese - 2.5 oz
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Mix the grated cheeses — mozzarella, Gruyère, and Parmesan.

Step 2

Cut each chicken breast in half.

Step 3

In each half of the breast, make a pocket with a sharp knife and fill it with as much cheese mixture as it can hold.

Step 4

Wrap the chicken breasts in slices of bacon (3 slices for each half) and secure with toothpicks.

Step 5

Grill over medium-hot coals for about 7–8 minutes on each side.
