Chicken Croquettes with Vegetables

Ingredients

  • Chicken fillet - 17.6 oz
  • Chicken Egg - 1 piece
  • Corn Flour for Polenta - 1.8 oz
  • Salt - to taste
  • Mild Chili Spice - to taste
  • Orange Bell Peppers - 1 piece
  • Marinated cherries - 3.5 oz

Step by Step guide

Step 1

Make a uniform minced chicken mixture using a blender.

Step 2

Add the egg to the mixture and mix well.

Step 3

Add corn flour (1 tablespoon), salt, and a little chili. If children will be eating the croquettes, it’s better not to add chili. Mix well.

Step 4

On a floured surface, roll the mixture into balls slightly larger than a walnut. For each ball, take a teaspoon of the chicken and spice mixture.

Step 5

In a saucepan, heat oil for frying. Drop the balls in small batches (5–7 pieces) and fry until light golden brown for about 3 minutes.

Step 6

Remove the cooked croquettes with a slotted spoon and place them on a towel or napkin to absorb excess oil.

Step 7

Prepare croquettes from the entire mixture in this way.

Step 8

Cut the bell pepper into squares approximately the size of the croquettes. Wash and dry the cherry tomatoes.

Step 9

Thread the croquettes onto wooden skewers alternating with the vegetables. It’s best to eat the croquettes immediately while they are warm.
