Chicken Curry with Apples
Ingredients
- Onion - 1 piece
- Salt - to taste
- Garlic - 1 clove
- Rice - 1 cup
- Olive Oil - 1 tablespoon
- Frozen green bean pods - 1 cup
- Pickled Apples - 15.9 oz
- Red Curry Powder - 2 teaspoons
- Chicken Broth - 4 cups
- Skin-On Chicken Breasts - 5 pieces
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Cook the rice until done. In a large skillet, heat the olive oil, add 1 teaspoon of curry, and sauté for 1 minute, stirring frequently. Add the diced chicken, mix to coat it evenly with the oil and curry, and fry for 5–6 minutes, then transfer to a plate.
Step 2
In the same skillet, sauté the diced onion and sliced apples (remove the core) with 1 teaspoon of curry until the onion is soft. Add the minced garlic, stir, pour in the broth, add diced dried apricots and spices to taste. Simmer covered for 3–5 minutes, stirring until the apples are soft.
Step 3
Remove the skillet from heat, add the chicken back in, add the peas, mix, and heat through.
Step 4
Fry the cooked rice separately, add salt. The dish can be served with rice.
