Chicken Curry with Rice
Ingredients
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Garlic - 2 cloves
- "Petelinka Thigh Fillet" - 4 pieces
- Red Curry Powder - 2 teaspoons
- Chicken Broth - 13 fl oz
- Basmati rice - 10.6 oz
- Crushed Tomatoes in Their Own Juice - 14.1 oz
- Fresh basil leaves - 7.1 oz
- Salt - to taste
Step by Step guide
Step 1
Peel and thinly slice the onion. Cut the fillet into small pieces. Mince the garlic and tomatoes.
Step 2
Sauté the onion in olive oil. Add the chicken fillet and sauté for 5 minutes, then add the garlic and curry, stir and cook for another 2 minutes.
Step 3
Pour in the tomato mixture and broth, bring to a boil. Simmer for 15 minutes. Add the spinach, season with salt, and cook until done.
Step 4
Cook the rice in salted water.
Step 5
Serve the chicken with rice, drizzled with sauce.
