Ingredients
- Onion - 1 piece
- Chicken fillet - 17.6 oz
- Farm fresh eggs - 3 pieces
- Potato protein - ½ cup
- Mayonnaise - 5 tablespoons
- Vegetable Oil - 1 tablespoon

Step 1
Rinse the chicken fillet, pat it dry to remove excess water, and chop it into pieces about 1–2 cm in diameter. You can use any meat, but the most tender cutlets are, of course, made from the breast. Finely chop the onion.
Step 2
In a bowl, whisk the egg with mayonnaise using a fork, add salt and pepper. Add the onion and chicken, and mix well. Gradually incorporate the starch in small portions until a light to medium thickness is achieved; do not aim for a strong consistency. You can always adjust the consistency during the process: use starch to thicken and mayonnaise to thin. The proportions depend heavily on the mayonnaise. Be sure to use a rich and thick mayonnaise, even one with a very intense flavor (the taste will become much milder when fried); a light one will not work well.
Step 3
Heat the oil in a skillet, and place the cutlet mixture in the skillet (about a couple of tablespoons for each cutlet). Fry over medium heat for a few minutes on each side: the meat will cook quickly, but you also need the mayonnaise to bind with the starch.
