- Ground meat - 12.3 oz
- Milk - 1 fl oz
- Fresh Mushrooms - 1.8 oz
- Breadcrumbs - 2.6 oz
- Chicken Liver - 2.6 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Madeira - 10.6 oz
- Chicken Broth - 2 tablespoons
- Cognac - 2 tablespoons
- Whole egg - 1 piece

Step 1
Prepare the liver filling by mixing the liver, egg yolk, chopped boiled mushrooms, salt, pepper, and a little milk. Shape into ovals.

Form the chicken cutlets, dip them in milk, and coat with breadcrumbs.
Step 3
Fry the cutlets in butter, then place them in a preheated oven and bake until cooked through.
Step 4
Drizzle the finished cutlets with Madeira sauce. To make the sauce, reduce the wine by half, combine with cognac, broth, and remaining butter, bring to a boil, and simmer for 5 minutes.
